Colony Grill Expands to Glastonbury with New Hartford County Location

Colony Grill, a Connecticut institution with a 90-year legacy and a reputation for its ultra-thin crust pizza topped with its famous Hot Oil, is expanding into Hartford County with a new restaurant planned for Glastonbury.

The upcoming location, scheduled to open later this year at 130 Glastonbury Boulevard in The Shops at Somerset Square, will offer seating for more than 175 guests indoors. The space will include a full-service bar featuring 12 draft lines, multiple televisions, and spacious dining areas designed for socializing. Guests will also be able to enjoy a sizeable outdoor patio equipped with TVs, making it a go-to destination for casual meals, celebrations, and game-day viewing.

“Colony Grill is a fantastic addition to The Shops at Somerset Square, and we’re excited to welcome such an iconic Connecticut brand to Glastonbury,” said Michele Aponte, General Manager of The Shops at Somerset Square. “Their emphasis on bringing people together and creating memorable dining experiences aligns perfectly with our community and our center.”

The Glastonbury opening reflects Colony Grill’s focus on connection and shared moments, supported by a devoted customer base throughout the state.

“For many years, guests from northeastern Connecticut have made the trip to visit our original locations,” said Paul Coniglio, CEO and co-owner of Colony Grill. “We’re excited to finally bring the Colony Grill experience closer to them in Hartford County. From post-game gatherings to weekly family pizza nights, Colony Grill is a place where the community comes together, and we look forward to welcoming Glastonbury.”

For nearly 100 years, Colony Grill has combined a streamlined menu with a strong culture of hospitality and community involvement. The brand actively supports veterans, first responders, and youth sports organizations while fostering a welcoming environment for all.

The Glastonbury restaurant will mark Colony Grill’s 11th location overall and its sixth in Connecticut, following the opening of its Shelton restaurant in January 2026.

Established in 1935 in Stamford, Connecticut, Colony Grill is best known as the home of the Original Hot Oil Bar Pie—a classic bar-style pizza served with its signature spicy topping. With locations across Connecticut, New York, Virginia, Florida, and Maryland, the brand is recognized for its approachable menu, friendly service, and deep community roots.
